Salmon Salad Sandwiches
Trips to Pike’s Place Market always end with a yummy dinner of fresh fish and veggies. Last night we had delicious baked salmon with pesto and a side of garlic pepper corn. Nothing beats a simply prepared fish dinner. Since we were so excited to eat our dinner, we forgot to take pictures of our meal!
So instead we took pictures of our leftovers in the form of salmon salad. We simply took the extra salmon with its coating of pesto (we blended fresh basil, olive oil, and Parmesan cheese in the food processor) with some light mayonnaise and slathered it on some bread for a fun sandwich for lunch. Since Dustin was taking this for lunch, the sandwich will be served cold, but I’m sure this would taste amazing if it were done panini style. Fresh fish tastes so much better in salad than canned fish, and we are so fortunate to live close to the water so that we may indulge in this delciousness!
