I cannot wait to make it back to Europe for a visit to Spain to eat some authentic Spanish paella. Until then, Dustin and I had to improvise and make our own, which was very simple to do thanks to this recipe from Epicurious. It was really fast and easy to come together. This version has chorizo and shrimp, but I bet it would taste great with some steamed mussels as well.
Although it may not look like much, when you serve this dish alongside some crusty bread and a bottle of light, crisp white wine, you have the perfect summer meal.
