Shrimp and Grapefruit Tabouleh Salad
When I stumbled upon this recipe, it was interesting enough that I had to try it. Super healthy and bright for summer (which I may note that the Pacific Northwest did not get the memo that summer has officially started— what is up with 50 degree weather in June?), I have to admit it was not my favorite thing I’ve ever made. But then again, I’m not a huge grapefruit person, so that probably should have been my first clue that I wouldn’t love this dish.
But in the end I’m really glad I tried it. I’d never had a tabouleh salad, and now I can say that I have. We aren’t going to love absolutely everything we make, and I think this dish was the perfect example of that. In our cooking adventures, we’ve really taken pride in enjoying new and unusual foods we may have never tried and exploring things because you never know what you might be missing out on. I’ve discovered so many foods that I now love that I completely missed out on when I was a picky eater. I’m never letting that happen again even if we occasionally create something we aren’t crazy about!
