Strawberry Caprese Salad
Since the arugula we bought petered out and we had to cut it from the dish, this sort of transformed from a salad to an extravagant bruschetta. Toasted, buttered bread with a wonderful fresh basil chiffonade, sliced almonds, fresh mozzarella, sliced strawberries, and a beautiful balsamic & basil olive oil dressing drizzle. It shouldn’t be a surprise that this turned out excellent because all of those ingredients sound so delicious. To make the dressing combine 3 tbsp of balsamic vinegar, 3 tbsp basil olive oil, 1 tbsp brown sugar, salt, and pepper.
This has got to be one of my most favorite salads!
