Red Beans and Rice
I first had red beans and rice at a party back in Seattle. Immediately afterwards, I begged Erin to make red beans and rice for me. Years later, I had to finally give in and make it myself :)
This creole dish is so tasty and flavorful, you can’t help but have multiple bowls. We followed a recipe from the kitchn. It made me feel legitimate by using dry beans and soaking them overnight. Authentic! A key to red beans and rice is the Andouille sausage. We got ours from Whole Foods for this dish, but maybe next time I can try making some from scratch!
