Chocolate Zucchini Bread
Zucchini is one of my favorite vegetables, drizzled with a little olive oil and placed on the grill, so I've always been curious about how it would taste in baked goods. With the abundance of fresh zucchini at the market, I figured now was as good a time as any. Making a chocolate zucchini bread has been on my list of foods to make for a very long time now, so I am now finally able to check it off. Side note— how come my list keeps getting longer and longer even though I am checking things off? I probably have enough things on my list to make something new everyday for the next three years. It's become hard to keep track of everything I want to try!
I tried to find a relatively healthy recipe, as I intended us to eat it for breakfast. It felt a little weird stirring a green vegetable into what looked like chocolate cake mix.
The bread baked perfectly, and made a perfect loaf.
We ate a slice for breakfast with dark chocolate peanut butter— can you say chocolate overload?— and raspberries alongside a glass of cold milk.
This bread was good, but I really didn't enjoy it as much as I thought I would given the copious amounts of chocolate. Next time I try zucchini bread, maybe I'll stick to a spiced bread recipe, or better yet, I'll stick with my favorite tried and true quickbread— banana bread!
