Chocolate Pomegranate Pancakes
Erin typically does the cooking, but every once in awhile, I force her to let me cook. Usually, that means me grilling up a steak. However, I convinced her to give up her culinary duties one morning and let me griddle up some pancakes. I was really feeling chocolate pancakes, and I wanted to throw a seasonal twist into it, so chocolate pomegranate pancakes it became.
Pancakes are pretty quick to make, and the only part of this recipe that will hold up your pancake feasting will be seeding the pomegranate. It took me about ten minutes or so to get all the seeds out by following this guide.
Then, just follow a simple cocoa buttermilk pancake recipe, but take about 3/4 of your pomegranate seeds and add them into the batter (plus a bunch of chocolate chips because that always makes life better). Pour the pancake batter on the griddle and let those babies puff up.
Finally, combine the rest of the pomegranate seeds with maple syrup and a spoonful of sugar in a blender. Warm that up in the microwave and you have a delicious pomegranate maple syrup to drizzle over your decadent pancakes.
