Maple Cinnamon Cashew Butter
Actually this is Maple Cinnamon Cashew Macadamia Nut Butter, but that title was just a tad too long. And it's mostly cashew butter.
The texture of this nut butter is quite different from your standard peanut butter. It's almost chalkier, if that makes any sense, and doesn't spread quite as easy (at least not after it's been in the fridge). However flavor-wise, it is the perfect complement to a big, steaming bowl of oats, or perfect to eat straight off of the spoon. If you added some chocolate chips to the mix, it would remind me mildly of cookie dough.
Maple Cinnamon Cashew Butter
- 1 1/2 cups cashews
- 1/2 cup macadamia nuts
- 1/4 cup pure maple syrup
- 2 teaspoons vanilla extract
- 2 tablespoon peanut oil
- 1 tablespoon cinnamon
- Process the nuts until finely chopped in a food processor
- Add in the liquid ingredients and process for several minutes (at least 5) until the consistency of the mixture reaches a paste.
- Add in the cinnamon and process a little more. Taste and adjust flavors to preferences
