Falafel Fail + Garlic Sauce Goodness
Let's start off with the positives. We made fluffy, delicious pita (and ate way too much of it over the course of two days).
We made perfect garlic sauce, officially known as toum, like you'd get from a Mediterranean restaurant when you order shawarma. We've been eating garlic sauce with everything from eggs to our everyday lunch sandwiches (as the most delicious spread ever). You have to create an emulsion much as if you were making homemade mayonnaise. It takes forever, but it's delicious, and the recipe made a ton. Basically we'll be eating toum forever, but that's not a bad thing!
On to the not so good...
I've never really had falafel that I've actually liked. The falafel that I've had in the past has ranged from disgusting to merely tolerable. I really think that I'd like falafel given that I can find a place that serves an excellent version. We decided to try our hand at making our own excellent version. Flavor-wise, we hit the falafel jackpot, but unfortunately it seems as though we were missing a key binding ingredient in our falafel because our falafel went from looking like this before it was fried.
To this after is was fried. Basically we ate falafel breadcrumbs with our pita. Needless to say, we won't be sharing our recipe for falafel, but I am now convinced that I will like falafel if I can eventually find a good place!
