Thanksgiving 2011
What are we thankful for? Turkey, cranberries, creamy mashed potatoes, chorizo stuffing, and pies!
My dad roasted the turkey as usual. And again he used his new technique to cook the bird. You cook the bird for about 15 minutes at 500° to seal the turkey and keep all the juices inside. Then you take it down to a slow roast at 350° until the bird hits its 172° internal temp.
Our staple Thanksgiving food besides turkey is my Mom's Chorizo Corn Bread Stuffing with Green Chili.
And we had wonderful Pineapple Cranberry Sauce.
Plus the creamiest mashed potatoes courtesy of Erin's Grandma's recipe.
Put it all together and you have a great turkey day.
But, can someone get to the pie already?
That's Bourbon Chocolate Pecan Pie.
And that is a Sherry Pumpkin Pie.
