Browned Butter & Lobster Risotto
To precede our molten chocolate lava cake, we cooked up a romantic risotto dinner together. You know it was romantic because it had lobster. When I went to Whole Foods to pick up ingredients, at the seafood counter, there were 3 of us all buying lobster tails. I'm pretty creative that way.
The recipe from Food Network was pretty similar to how I made Risotto back during the famous Cookoff. The extra addition of browning the butter at the start helps intensify the delicate flavor. The outcome this time was spectacularly (even better than the Cookoff). The rice was at a perfect consistency. Everything was moist, flavorful, and the hints of parmesan teased our tastebuds when combined with the lobster tails.
It was a delicious and extravagant Valentine's Day dinner, and I couldn't ask for a better person to spend it with.
