California Roll Sandwiches
This was really the simplest of meals inspired by a basic California sushi roll. We made sure we used real crab, not imitation crab, because we aren't really fans of the super cheap California rolls. Basically you make a crab salad, but amp up the Asian flavor with a little bit of soy sauce and liberally add avocado to the top. Instead of rice, you have a bun (we used some of the leftovers from our perfect cheeseburgers).
A perfect weeknight meal for any sushi lover!
California Roll Sandwiches
serves 2
- 8 ounces crab meat
- 3 tablespoons mayonnaise
- splash or two of soy sauce, to taste
- 1/2 cucumber, chopped
- 1 avocado, chopped
- 2 buns, sliced
- Combine the crab meat, mayonnaise, soy sauce, and cucumber in a medium-sized bowl.
- Place the crab salad on top of the sliced bun.
- Top with avocado and enjoy!
