Butter Chicken Lasagna

The idea of an Indian lasagna jumped into my head, so I googled butter chicken lasagna and stumbled across this recipe from the Canadian Food Network. In the end it took me a lot longer to make than I originally anticipated, but it was a labor of love to create a more elaborate meal for Dustin when he arrived than I've been doing as of late. Although I made the butter sauce from scratch, I think this recipe would be a great way to use up Indian leftovers! This hybrid meal sort of reminds me of my favorite Tandoori Enchiladas!

We made a few tweaks to the original recipe, adding some fresh mozzarella to the mix and topping with fontina cheese since we had both on hand!
