
It's been awhile since I've brought out the Cookie Dough Lover's Cookbook, so I figured it was about time to try another recipe. The easy fudge recipe seemed promising; however, I definitely wanted to spruce it up a bit— with M&Ms and white chocolate chips in addition to regular ol' chocolate chips called for in the recipe. This is an easy no-bake recipe that doesn't require a candy thermometer or any fudge making skills whatsoever.

I promise you only need a small piece of this fudge because it is sweeeeeet (not surprising considering the main ingredient is powdered sugar....lots of it). According to the cookbook, the recipe make 64 pieces and it's only made in an 8"x8" pan. We cut our pieces a little bigger than that because a 1" square is barely more than a bite, and you need at least a tad more than that. I think Dustin cut ours into 42 rectangles, which seems to be a good number.

And this was the final dessert Dustin took to his coworkers in Seattle...the end of an era! And now they can no longer claim that I am making them fat!

## M&M White Chocolate Cookie Dough Fudge

#### Cookie Dough

- 1/3 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1/2 teaspoon vanilla extract
- pinch of salt
- 1 tablespoons half-and-half
- 1/2 cup all-purpose flour

#### Fudge Base

- 1/3 cup brown sugar, packed
- 1/3 cup unsalted butter
- pinch of salt
- 1/3 cup half-and-half
- 4 3/4 cups powdered sugar
- 1 teaspoon vanilla exract
- 1/2 cup mini chocolate chips
- 1/2 cup white chocolate chips
- 1/2 cup M&Ms

1. Line an 8"x8" baking dish with aluminum foil, leaving the foil handing over the edges. Spray with cooking spray.
2. Begin by making the eggless cookie dough. In a large bowl, cream together the butter and sugars until light and fluffy. Add in the vanilla extract, salt, and half-and-half. Slowly mix in the flour. Set aside.
3. Make the fudge base by combining the brown sugar, butter, salt, and half-and-half in a medium saucepan over medium heat. Heat until butter is melted and sugar is dissolved. Remove the pan from heat and slowly stir in powdered sugar 1/2 cup at a time. Add in the vanilla extract. The mixture should have cooled significantly at this point.
4. Add the cookie dough to the fudge base and then fold in the mini chocolate chips, white chocolate chips, and M&Ms.
5. Spread into prepared dish, cover with aluminum foil and chill in the refrigerator for at least 5 hours before slicing. Store in the fridge for up to a week.

M&M White Chocolate Cookie Dough Fudge

I've been wanting to make cake batter fudge, and I've been wanting to make cookies 'n' cream fudge. What would be the smart move here? Combining the two and making cake batter cookies 'n' cream fudge, of course! Inspired by [Birthday Cake Oreos](/blog/2013/03/fried-birthday-cake-oreos/) (I used them all up making this fudge, so I promise I'm done using them in recipes for awhile), these two flavors taste great mixed together in cookie form and fudge form as well.

Dustin proclaimed this to be the best fudge he's ever had and demanded I make fudge more often. I could very easily honor that request because this recipe is a super simple, no-bake recipe that is fast to make (minus chilling time in the fridge), although knowing me, I'll have to add some clever spin to it to keep things fresh.

Someone at work asked Dustin if it was his birthday, which made me realize this would be the perfect things to make for someone's birthday without having to invest too much time in the kitchen. And nobody will care because it tastes that good!

## Cake Batter Cookies 'n' Cream Fudge

yields 1 8"x8" pan

- 2 1/2 cups white chocolate chips
- 1 14-ounce can sweetened condensed milk
- 1/2 cup cake mix
- 2 teaspoons vanilla extract
- 1/2 cup sprinkles, divided
- 1 cup crushed {Birthday Cake} Oreos

1. Line an 8"x8" pan with aluminum foil, leaving foil hanging over the edges.
2. Melt white chocolate chips according to package instructions.
3. Add in sweetened condensed milk, cake mix, vanilla extract, and half of the sprinkles. Mix until smooth and uniform.
4. Fold in crushed Oreos.
5. Pour into pan and spread into all corners.
6. Top with remaining sprinkles.
7. Cover with aluminum foil and allow to cool in the fridge for at least 4 hours or until completely firm.
8. Using the aluminum foil "handles" you left over the edge of the pan, remove the fudge from the pan and use a sharp knife to slice into pieces of desired size.
