Coconut Crusted Chicken Tenders
Making fried chicken is still on our to-do list together. But we usually reserve our frying ventures for the weekend, so for a quick weeknight meal, we usually bread our chicken with Panko breadcrumbs and bake them in the oven until crunchy for a faux-fry.
This time around we added some shredded coconut to the mix as if we were making the ever-popular on restaurant menus coconut shrimp, made a peachy dipping sauce to go with them, and there we had a meal that was super simple to throw together after a tough workout at the gym.
We simply used the same basic techniques we used with the Doritos crusted chicken tenders (by far our best baked chicken tenders to date) except instead of crushed Doritos we added shredded coconut— not enough to overpower the dish, but enough to let the coconut flavor shine through.
I'm starting to run out of potential breading for our faux-fried chicken tenders and desperately need to come up with some more ideas, or else we'll be trying different flavor of Doritos in the coating (although I'm not sure either one of us would be complaining at that!).
