Eggs in a Latke

When Hanukkah rolled around, Erin wanted us to brainstorm some latke dishes. She came up with our Latke Lamb Burgers, and I rolled out a few exciting latke fusion dishes. We've never had Eggs in a Basket, but we saw a fellow diner at The Tasting Kitchen order them, and they looked delicious. In a weird random part of my brain, the idea for Eggs in a Basket with latkes as the basket was born.

To get an idea of how this is made take a look at this progression. We start with a perfect latke layered into a ramekin with a second hollowed-out latke on top.

Fill it with a little shredded cheese.

Crack in an egg and grind fresh pepper and salt on top.

Sprinkle a little more cheese on top.

And bake.

Pan fry some coarsely chopped salami and whip up an heirloom tomato salsa, and you have one delicious meal!
